In a large bowl, whisk together the olive oil, red wine vinegar, dry mustard, parmesan, and salt and pepper until well combined.
To the same bowl, add the chopped lettuces, julienned salami, mozzarella cheese, and drained garbanzo beans.
Toss everything together to ensure the ingredients are well coated with the dressing. Adjust seasoning as needed.
